i have a photo of a men, how can i make his skin look like the 1 of a zebra or any animal (photoshop)?

There are lots of ways to do what you want.
You can lasso all the areas of skin you wish to change, saving them into one selection. Then bring the desired image of animal skin over the man in another layer. Use the saved selection (inverted) on the new layer to cut away unwanted animal skin. Then set the animal skin layer’s blend mode to multiply.
Or…
You can paint with texture. I would probably paint the texture on another layer and set the layer’s blend mode to multiply. If you look in Photoshop’s help files, you will find instructions both about defining textures/patterns of your own, and painting with texture.
